Stuck on dessert? Impress your date with this classic Italian recipe for Tiramisu.
Tiramisu literally means “pick me up” or “pull me up” because of the sugar and coffee in this dessert. It’s a foolproof dish that doesn’t even need to go into the oven so it’s perfect whether you are a novice cook or a kitchen pro!

Tiramisu Recipe
Ingredients for the base:
18 savoiardi biscuits (from your local Italian Deli!)
150ml strong espresso
5tbsp marsala
For the mascarpone cream:
3 large free-range eggs (separate eggs from yolks)
5tbsp sugar
250g mascarpone
100ml whipping cream
Cocoa for dusting
Method
1. Place the 3 egg yolks in a large bowl with the sugar and whisk until very pale. Add the mascarpone and the cream to the bowl and beat until thickened.
2. In a separate bowl, whisk 2 egg whites until peaks are formed. Slowly add the whisked egg whites to the mascarpone cream, folding gently, mixing well but lightly.
The cream should be soft and airy.
3. In a seperate bowl, mix the marsala and the espresso. Dip each side of the savoiardi biscuits one by one in the marsala-espresso mix, still keeping the savoiardi firm.
4. To assemble, layer the biscuits in a glass, then add cream, followed by another biscuit until full, finish with a layer of cream. Sprinkle cocoa powder on top to finish and serve.
